Back to School Week...Beans, Cornbread, and Fried Green Tomatoes


So I may have mentioned it in the intro, but my blog is about sharing Southern Supper Ideas.

I don't claim to be Martha, Rachel Ray, or Giada.....( disclaimer for the delicious simplicity to follow).

My recipes and ideas are simple and southern. Many of them bring back great memories: Sunday dinners around Nana's table, comfort food for my husband after a hard day's work in the field during a July heat wave, and of course, Friday night dinners with our best friends in which the conversation is as much the main event as the wine and food to follow.

So for simplicity's sake, I'm cooking one of my hubby's favorites: beans with ham, fried green tomatoes, turnip greens, and cornbread.


Recipe(s) Idea:

1 pkg dry beans ( great northern or pinto)
1 .5"thick cut piece of ham. individually sealed. cubed
1 can Glory brand pre-seasoned greens
3 small green tomatoes
self rising flour
eggs
jiffy cornbread mix. ( follow label directions and add a pinch of sugar)
After removing any bad looking beans, soak them for an hour in 8 cups of water in a crock pot. After soaking, add cubed ham and turn the crock pot on low for 3 -4 hours, adding salt and stirring occasionally.
Cut tomatoes into paper thin slices. Dip them in egg, then flour. Place in skillet with oil on medium heat. Brown each side 3 to 4 minutes, then remove.
Serve with the turnip greens ( already seasoned....they are awesome!) and cornbread.

Southern Stuffed Bell Peppers



As summer comes to an end, we Southerners anxiously count down the days to football, foliage, and fabulous food reminiscent of Fall. However, the last fruits of our summer gardens beckon us to the kitchen for the season's last tastes of home grown peppers, tomatoes, and okra. Here is the first of 3 down home meals I will be serving up for my hubby (and guests that may pop in) this week. First up: a back-to school recipe guaranteed to please the kids AND the kids -at -heart!

Southern Style Italian Sausage Stuffed Bell Peppers.

Recipe:


1 pound Italian sausage
4 bell peppers
1 medium onion diced
2 servings prepared whole grain instant rice
1 can (13 ounces) diced tomatoes
1 can (8 ounces) tomato paste
1/2 can corn( optional) drained.
1/2 cup shredded Parmesan cheese

Preheat oven to 350.

Place skillet on medium heat. Brown onion and your Italian sausage. Add cooked rice to meat mixture and stir thoroughly. Add diced tomatoes, paste, and corn stirring until mixture is heated through. Reduce heat.

Cut the tops off of the peppers and remove stems. Place the whole peppers in 1/4 in water in microwave safe bowl on high for 5 minutes. Remove peppers and stuff the mixture to fill each pepper. Bake for 20 minutes or until browned on top. Sprinkle with Parmesan cheese.

Enjoy with fried okra and fresh peaches for dessert! Its so Yum Yall!

So, that was the brainchild for starting this page. So break out your grandma's Mississippi mud cookie recipe and dust off the Baptist church cookbook and share your ideas.
