Back to School Week...Beans, Cornbread, and Fried Green Tomatoes


So I may have mentioned it in the intro, but my blog is about sharing Southern Supper Ideas.

I don't claim to be Martha, Rachel Ray, or Giada.....( disclaimer for the delicious simplicity to follow).

My recipes and ideas are simple and southern. Many of them bring back great memories: Sunday dinners around Nana's table, comfort food for my husband after a hard day's work in the field during a July heat wave, and of course, Friday night dinners with our best friends in which the conversation is as much the main event as the wine and food to follow.

So for simplicity's sake, I'm cooking one of my hubby's favorites: beans with ham, fried green tomatoes, turnip greens, and cornbread.


Recipe(s) Idea:

1 pkg dry beans ( great northern or pinto)
1 .5"thick cut piece of ham. individually sealed. cubed
1 can Glory brand pre-seasoned greens
3 small green tomatoes
self rising flour
eggs
jiffy cornbread mix. ( follow label directions and add a pinch of sugar)
After removing any bad looking beans, soak them for an hour in 8 cups of water in a crock pot. After soaking, add cubed ham and turn the crock pot on low for 3 -4 hours, adding salt and stirring occasionally.
Cut tomatoes into paper thin slices. Dip them in egg, then flour. Place in skillet with oil on medium heat. Brown each side 3 to 4 minutes, then remove.
Serve with the turnip greens ( already seasoned....they are awesome!) and cornbread.
